My Westinghouse 42" 1080 LCD Tv doesn't seem to recognize the stereo signal coming from my cable box. I have Brighthouse HD service, and am connected with an HDMI cable. Audio settings on the tv will not allow me to switch to stereo. MTS Setting is on mono, and grayed out (unchangeable). The same happens with my DVD player, also connected through an HDMI cable. I have the audio output from the tv going to a receiver, and am certain I am not getting a stereo signal.

I can help you with your issue ,
Why don't you simply run the cable box and DVD stereo outputs direct to the receiver. Thats what most people do. TVs do not passthrough stereo signal very well do to DHCP compliance requirements .
