This can be done in a few ways: synchronizing with Outlook/Lotus Notes, via SIM card or sending the contacts manually as vCard files. I've recently bought a Sony Ericsson Elm and wanted to transfer contacts from my old Nokia 6233. From the main menu, Choose contacts Select options and Press Advanced Choose "Copy to SIM". Select one of the options that pop up. All the existing SIM card data is replaced when copying the contacts from the Phone to the SIM card.
Pictures and text message can't be saved to sim-card. You need to transfer these with memory card or to computer and from computer to other phone.
