All lot of those printers came with two separate driver's disc. Make sure that you are installing the correct for the mac and not windows. If you are you can go to the hp website and do a search on there website for the driver for mac operating system.
You can, and it's really easy!
Go to this site and download the software under drivers called "HP Officejet and Photosmart Full Feature Software and Drivers - Mac OS X v 10.6".
Unplug your all in one printer/scanner and install the program. Then plug the printer/scanner back in and it should work fine - you'll have all the options you had previously.

The printer scan button wouldn't work for me either. I had to install the HP Solution Center software from CD onto my Windows Vista PC then I use its scan document software button to do any scanning.

Do you have HP solution center installed on the computer? You need this software on you PC to scan correctly. You can download it from HP here: http://h20180.www2.hp.com/apps/Lookup?h_lang=en&h_cc=us&cc=us&h_page=hpcom&lang=en&h_client=S-A-R163-1&h_pagetype=s-002&h_query=c5200&submit=Go+%BB
Just pick the exact model you have and correct operating system (Windows XP, Windows 98, Mac OS 10.5) then pick the bundle/full feature driver and install that and your scanner should allow you to scan to you PC. You may find it less of a hassle to scan from the PC by using HP software and selecting scan.
