The evap coil freezing up is likely due to the defrost cycle not working. The little defrost t-stat looks like a little disc with wires coming out of epoxy. If that is swollen or the expoxy is popped up at all it's bad. You can check it for continuity if you have a multimeter. The next thing would be the defrost timer itself that is bad, the last and least likely item to fail is the heating element itself, you can also check it for the proper ohm value to make sure it's OK. http://www.partselect.com/Schematics/Maytag/SS50-8.gif
Did any of the repairmen replace the heater which is at fault or did all three of them change it? If it has not been changed then I would suggest that it should be. If it continues to be a problem then you can get drainline heaters added to the system but you would need to talk to a fridge guy before they wasted a journey. The other possibility is that the front cover is not inside the drain pan or a leak in the drain pan, and if you have an icemaker you could even get water coming from further up the cabinet. Either way I would suggest picking your favourite of the three and tell them that the problem is unresolved. Most fridge guys offer some sort of warranty on work that they do. you may need to clean the drain tube again. the only other place that water may come from is the ice maker if it is over flowing. this however would be very obvious. use some thing like a length of cloths line cable to "snake" the drain after you defrost it. the fastest way to defrost it is to use hot water and a turkey baister. good luck.

See if freezer fan is running when the unit is on. If you hear no fan when it's running. You probably need an evaporator fan motor.
Also check for ice or frost build up around fan.

take all the bottom shelves and baskets out of the freezer. look at the back wall of the freezer. youll see a block of ice in a metal pan looking part at the bottom of the rear panel. there is a hole in the bottom of that pan. thats the defrost drain. its clogged. use a hair dryer to get all the ice out then use hot water to flush out the drain hole.
