I have a Sub-Zero 550 bottom freezer unit, and I recently took the ice tray out as the old ice cubes had frozen in to a big block. Simply replaced the ice tray after that but two things went wrong after that
1) the Ice maker stopped making ice
2) the whole freezer unit is just chilling, not freezing any more. I emptied the whole unit, cleaned it, and re-started that with just some water in a mettalic tray, and even after 24 hours, the water is not frozen completely, it just has a thinn layer of ice formed on the surface. Both the freezer section and the fridge are set to 4 on the dials

Ice maker was intermittent at best - ice was often just a shell. After two failures to correct we had the ice maker (a Whirlpool - on a Sub Zero - Go figure) replaced. Then the paddle that detects the ice level broke. Next step a new GE.
I have the same problem; ice maker stopped working; water/ ice forming on top of freezer; cold but not real frozen
