If you want really good bread you need to ditch the all purpose flour. It will always be more dense and short compared to bread flour. Be sure to buy a bag of flour that says "bread flour" on the bag.You will get a more normal looking and tasting bread.
While bread flour is most recommended for bread, creating a stronger dough that will rise higher, all-purpose flour is okay, as long as it is kneaded well enough. All-purpose flour has a better flavor than bread flour, and is indicated when a soft, cottony texture is the aim. Unbleached had a slightly higher gluten content than standard bleached flour.
