If it is a regular cap you just unscrew it. If it is a pop up one you push down and release and it will pop up, then you unscrew.

SOURCE: My Harley Davidson Sportster 1200 cuts out during exceleration

The volt reg could be getting over volts, the charging system may need to be tested to determine whats going out.The voltage output from the stator goes up with more rpms, when the voltage regulator gets too much it dumps it into the grounding side of your electrical system(somethimes the ground wire will get smoking hot)This dump of power could also kill the rest of the system.Make sure your carb is clean (remove trash from inside the jet and filter) just to be sure its not just dirty fuel system.

It is fuel injected and electronically controlled. Start with STP fuel system cleaner. Then work through electronic metering and timing.

I would guess stale gasoline or fuel. Try fresh fuel in the tank. If this doesn't clear the problem, you could need to have your carburetor or fuel injection system cleaned. I'm not even sure if they put fuel injection on Sportsters since I don't work on fuel injected bikes. I mostly work on the older bikes like Panheads, Shovelheads, Evos. Not too many Sportsters but have worked on a lot of Ironhead Sportsters. Try the fuel first. It's a cheap fix. Hope it works for you. Good luck with the knee replacement. My wife had one knee replaced and it works great.
