SOURCE: quinny zapp bar keeps dropping
It sounds like you put too much weight on the back of the buggy - handles at some point.
This happened mine too. it clcks into place but it doent stay up.
I looked intogetting it repaired but it cost too much - in myopinion
SOURCE: problem with zapp seat
There are two blackclips on the top inside handles pull these gently to loosen the seat cover. Then repeat on the bottom. You will also have to unbutton the back of the seat (there are two black straps) then half fold the buggy and pull the seat towards you. Its a bit niggly and frustrating but does eventually come off.

You have hopefully sorted this out by now, but I had a similar problem with my Quinny Zapp. I sprayed the button with WD40 (between the button and the surrounding plastic) and this did the trick for mine.
Best wishes
